1.5 - 2 pounds taro root, cooked and mashed
1 tsp olive oil
1 large sweet onion, diced
2 jalapenos, seeded and finely diced (optional)
1/2 to 1 tsp salt, to taste
1 large grated carrot
3 T parsley (optional)
1/2 cup flour
Sauté onions and peppers in olive oil until onions
are browned. Combine with taro along with egg, salt, carrot and
parsley. Dust balls of the mixture with flour and form into patties.
Either bake in 350F oven for 20 minutes, turning halfway through,
or fry in a bit of oil.
